Crispy Muesli Bars with Cashew Butter

Ingredients

  • 2 cups muesli (or rolled oats + nuts/seeds)

  • 1/3 cup chopped nuts (walnuts/almonds) + chocolate chips (optional)

  • 1/3 cup honey or maple syrup

  • 2–3 tbsp coconut oil (or melted butter)

  • Pinch of salt + 1/2 tsp cinnamon (optional)

  • 1/2 cup cashew butter (for the middle layer)

Steps

  1. Preheat oven to 170°C / 340°F. Line a small baking pan with parchment paper.

  2. Mix muesli, nuts, salt (and cinnamon). Warm honey + oil, then pour into the dry mix and stir until coated.

  3. Press half the mixture firmly into the pan. Bake 8–10 min until lightly golden.

  4. Spread an even layer of cashew butter on top.

  5. Add the remaining muesli mix, press down hard, and bake 10–12 min more.

  6. Cool completely (best 1–2 h in the fridge), then slice into bars.
